CocoBeet Soup

This soup is so simple, delicious and super nourishing. Best thing about it is it's a chop and dump type of recipe for when you're not feeling super inspired to cook (or simply don't have the time). Balancing healthy eating with a full personal life doesn't have to be complicated, so go ahead and enjoy this super simple soup!

Scarlet Soup

  • 1/2 Red or white Onion
  • 3 Carrots
  • 1 Red potato
  • 1 Beet
  • 1 1/2 cup of coconut milk
  • 1 Tablespoon of hot sauce
  • 1 Teaspoon each of red pepper flakes, ginger, paprika, and curry
  • 1 Teaspoon of salt
  • ¼ cup asparagus, parsley, spinach or sprouts to top


  1. Chop everything
  2. Simmer onion in medium sauce pan with a tsp or two of ghee
  3. Add Potatoes and simmer for 3 minutes
  4. Add 4 Cups of water or broth
  5. Add carrots, beet
  6. Bring to a boil.
  7. Add spices and simmer for 25 minutes
  8. Add coconut milk and simmer 15 minutes
  9. Blend with an immersion or regular blender and top with hemp seeds, broccoli sprouts, a dollop of guacamole or whatever strikes your fancy
