Spicy Cinnamon Carrots
A little spicy and subtle sweet, try this recipe for a nice summer treat!
Its insane the flavor of fresh carrots from the farmers market. A lot of recipes for carrots often include honey or maple syrup but I think that the sweetness of the carrots is perfect and enhanced naturally by the cinnamon and coconut oil. Pairs awesome with creamy dill dressing (recipe coming soon). I hope you all are enjoying the summer bounty!
- 6 carrots, peeled and sliced diagonally
- 1 teaspoon ceylon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon paprika
- 1/4 teaspoon chipolte
- 1 tsp orange zest
- 1 tablespoon coconut oil
- Preheat oven to 400 degrees. Combine carrots and spices in a large bowl and toss to coat. Place in a small oven safe baking dish..
- Bake for 20 minutes, then stir and bake for an additional 20 minutes or until carrots can be easily pierced with a fork. Once taken out of the oven top with 1 tsp of orange zest.
