Just Truffles

The Mayan civilization held cacao as a sacred medicine, the food of the gods, and a drink reserved only for the living deity and hierarchy of their civilization. While in Guatemala I was honored to take part in several cacao ceremonies, sharing with others the heart warming gift of mother cacao. Cacao, once consumed has an immediate physiological, psychological, and spiritual effect on the entirety of your being. You've probably felt the effects of cacao at some point in time. Just think of a day when you maybe felt down and you eat a square of chocolate. What happens? Your mood elevates, your heart rate increases, and an overwhelming feeling of warmth and comfort consumes you... if you haven't experienced this (or if you have) let this recipe indulge you in the gift that this sacred bean readily gives.

Just Truffles

  • 5 oz Dark Chocolate (85% or above) - i like this brand
  • 1½ Tablespoons Coconut Oil
  • ½ cup Coconut Milk (full fat)
  • 1 tsp cinnamon and chili
  • ½ cup shredded coconut for rolling

Directions:

  1. In a saucepan, add coconut milk and allow to simmer. Once it starts simmering, remove from heat.
  2. Add dark chocolate, coconut oil and spices into the saucepan and stir with a spatula till completely melted and incorporated.
  3. Transfer coconut chocolate mixture into a container and allow to chill in the fridge for about 4 hours.
  4. Once completely chilled and hardened, use a melon baller or tablespoon spoon and scoop out chocolate to shape into lovely little spheres
  5. Coat each truffle in coconut or cacao powder
  6. Chill or indulge with a cup of cinnamon tea and smooth jazz!
